USA WINS THE BOCUSE D'OR AMERICAS 2022.CANADA (2nd) AND CHILE (3rd) COMPLETE THE PODIUM
  • The victory of the USA team represented by the chef Jeffrey Hayashi and his commis Franco Fugel, closes this day of Bocuse d’Or Americas, the American selection of the famous gastronomy competition. 
  • Canada, Chile, Colombia and Mexico also join the winner at the Bocuse d’Or Grand Final during Sirha Lyon next January.

THE PODIUM OF BOCUSE D’OR AMERICAS 2022:

The team from USA represented by the chef Jeffrey Hayashi and his commis Franco Fugel, won the first place in this continental selection. They offered to the jury a breathtaking culinary experience combining a 100% vegetal theme on plate based on quinoa and mushrooms pave and both roasted and confit salmon with brown butter citrus jus, beet and pistachio garnish for the theme on platter. 

Canada ended at the second step of the podium, lead by the chef Samuel Sirois and his commis Léandre Legault-Vigneau who prepared for the plate theme a plant-based world surrounded by quinoa, carrots and onions, and for the theme on platter salmon spawning. 

Chile, the host country for the first time in the history of this American selection, took the third place. Buoyed by their supporters and the desire to honor their gastronomic heritage, chef Ari Zúñiga and his assistant Javier Sobarzo prepared a quinoa with potato confit for the plate theme, stuffed with stewed quinoa with vegetarian crunch and pickled topinambur petals. For the platter, a cured salmon, stuffed with pistachio farce, wrapped in "Chapalele", a traditional Chiloé-inspired potato dough.

With them, Colombia and Mexico, respectively at the 4th and 5th place, are also qualified to go to Lyon next January for the Grand Final of Bocuse d’Or.

During their deliberations, the 8 members of the jury were keen to reward the technique, the mastery of the products and the creativity of the recipes combining the Chilean terroir with the gastronomic codes specific to each of the candidates.

The next step for this Bocuse d’Or continental selections is the Bocuse d’Or Africa on 9th Septembre, during which the last teams will qualify for the Grand Final.

Next Bocuse d’Or Final will be held on 22 and 23 January 2023 during the Sirha Lyon in France and will bring together 24 chefs from all over the world from the four 2022 continental selections (Bocuse d’Or Europe, Bocuse d’Or Americas, Bocuse d’Or Africa; Bocuse d’Or Asia-Pacific).
